Mango Curry


Mango season is more or less through and the mangoes that accessible nowadays are thotapuri and bainganapalli varieties which don’t have much of a sour flavor. They are good apt to prepare curries which have a predominately sweet flavor.

Ingredients for Mango Curry:

  • half tsp of Cumin seeds 
  • one tbsp of Oil 
  • one tbsp of Jaggery 
  • six Red Chillies 
  • 3/4 tsp of Salt 
  • Half cup of Coconut (grated)
  • two big Onion, (sliced )
  • 250 gms of Green Mangoes 
  • 6 Pods of Garlic flakes
  • 1 tsp of Coriander seeds 
  • Half tsp of Turmeric powder 
  • Small amount of ginger

 How to make mango curry instantly:
  • Peel green mangoes neatly
  • Slice each mango into tiny pieces and remove the seeds
  • Wash and keep aside
  • Grind together granted coconut, chilies, garlic, ginger, cumin and coriander
  • Heat oil and fry onions turn over to transparent
  • Include ground mixture and stir-fry well, till oil begins to leave the masala
  • Include mango slices and jiggery Pour one glass of water
  • Add needed amount of salt and prepare on medium flame till mangoes are tender and curry thickens

Chala Fish Curry

       Sardine is easily available and is not expensive. It is a very common fish in Kerala. The curry is cooked in clay pots with lots of green chilies. 

The Ingredients are: 
  • Chala fish – well cleaned 15 no’s
  • Onion small – ¼ kg                               
  • Garlic – one small piece
  • Green chilies – 3
  • Oil – 2 tbsp
  • Coconut – ¼ kg
  • Turmeric powder – ½ tea spoon
  • Chili powder – 1 ½ tea spoon
  • Cumin seeds – ½ tea spoon
  • Curry leaves – 5 
  • Vinegar – 1 tbsp
  • Water – one cup
  • Salt to taste
Method to prepare
  • Scale and clean the fish. Wash the fish in several changes of water.
  • Make a paste of coconut, onion, turmeric powder, cumin seeds and chili powder.
  • Take a pot and pour oil.
  • Garnish mustard, curry leaf, garlic and tomato.
  • Add the grinded paste to the pot with little water.
  • When the paste gets boiled in the pot add fish to it.
  • Simmer the stove and allow the curry to boil until the fish is well cooked.
             Now serve with fresh cooked rice. It is excellent in taste. You can give it a try.
