French fries made simple


Ingredients:-

  • Potatoes – big ones four no’s
  • Salt – to taste
  • Oil – as required 

Method to prepare:-

  • Boil enough water, so as to cover the potatoes (about 4 cups) with the salt.
  • When water comes to a boil, add the potatoes, shut off the heat and leave thus for 5-6 minutes.
  • Drain well and wipe dry with a cloth, if in a hurry.
  • Heat oil and when a piece of potato thrown in comes up at once, add some potatoes (they should not touch each other too much).
  • Lower the heat to medium and fry till almost cooked but not brown. Remove from oil and drain.
  • Just before serving fry over high heat, till a golden brown and serve.

The taste of Capsicum Soup


Ingredients:-
  • Capsicum - 1 (red or green)
  • Onion - 1 small or 1/2 medium
  • Garlic - 2 cloves
  • Tomato - 1/2
  • Green Chilies - 2
  • Cilantro - handful
  • Chicken/ Veg Stock - 2 cups 
  • Ground Pepper - as needed
  • Roasted Cumin Powder - 1/2 tsp
  • Salt - as needed
  • Olive Oil - 2 tsp
  • Cream - 1/2 cup (optional)

Method:-
  1. Heat Oil in a pan, saute the garlic and onion for a minute.
  2. Add the capsicum (bell pepper), tomato, green chilies and Cilantro and cook till the capsicum becomes soft. Switch off.
  3. Puree the mixture using a hand blender or a mixie. Strain the pureed mixture to remove the seeds and skin. (Some people like to continue without straining but the texture will be different. This step is a must to get a smooth and creamy soup.)
  4. Add this strained soup back to the pot and add the chicken/ vegetable stock to it. Switch on the stove.
  5. Add required salt, cumin powder and required pepper powder. Bring the soup to a boil.
  6. Add the cream to the soup to thicken it. Alternatively, mix little corn flour with some water and add to the soup while boiling.
  7. Simmer for another 5 -10 minutes and switch off.
  8. Garnish with heavy cream, crutons, toasted bread piece, fresh herbs etc according to your taste and imagination. Serve hot.

Majestic Dum Biriyani


Ingredients:-

  • 1 kg chicken, washed and drained completely
  • 2 large onions, finely sliced
  • 2 tbsps chopped coriander leaves
  • 1 tsp saffron
  • ½ cup Luke warm milk
  • Salt to taste
  • 2 tbsps ghee + 5 tbsps oil

For marination:-

  • ¾ cup thick curd/yogurt
  • 8-10 green chilies make a small slit in them
  • 1 ½ tbsps ginger garlic paste
  • 1 tbsp red chili powder (adjust)
  • ¼ tsp turmeric powder
  • ¾ tbsp coriander powder
  • ½ cup chopped coriander leaves
  • ¾ cup pudina leaves
  • Juice of 1 lemon
  • 1 ¾ tsps salt

Biryani masala, make pwd:-

  • 8 cloves
  • 1 cinnamon stick
  • 4 elaichi/cardamom
  • ¾ tsp shah jeera
  • 12 pepper corns

Ingredients to cook rice:-

  • 4 cups Basmati rice
  • 6 Cloves
  • 3 Cardamoms
  • 1 inch Cinnamon Stick
  • 3 bay leaves
  • 1 Marathi mogga
  • 1 Star anise
  • 10 Mint leaves
  • 1 tbsp oil
  • 1 ½ tbsps salt
  • Water as required

Method to prepare

  1. Marinate chicken with the ingredients called for marination along with biryani masala powder. Keep aside for 4 hrs. While the chicken is marinating, work on the rest of the preparation.
  2. Cook basmati rice in lots of water along with bay leaves, cloves, cinnamon, cardamom, Marathi mogga, elaichi, oil and salt till it is half cooked. Strain the water and spread the rice on a large wide plate. Allow it to cool.
  3.  Heat 1 tbsp oil and 1 tbsp ghee in a vessel add sliced onions and salt for 8-10 minutes till caramelized. Remove and keep aside.
  4. Take a wide deep vessel to prepare the biryani. Add 3 tbsp oil and add the marinated chicken and spread out over the vessel. Cook on high for two minutes. Add a tbsp of oil over the chicken pieces and reduce the flame. 
  5. When it is half cooked, spread half of the rice over the chicken layer and pour half a tbsp of ghee all over the rice, add half of the caramelized onions and spread over the rice. Next sprinkle a tbsp of coriander leaves and pour about one fourth cup of saffron milk over the rice. Over this layer spread the remaining rice. Again pour half a tbsp of ghee all over and add remaining caramelized onions and spread over the rice. Finally sprinkle a tbsp of coriander leaves and pour remaining saffron milk over the rice. 
  6. Place the lid and over the lid place a heavy weight and seal the edges with wheat dough. Cook on high flame for two minutes. Remove the vessel from the stove and place a iron tawa. Allow to heat. Reduce to low flame and place back the biryani vessel on the iron tawa and cook biryani for 20 – 25 minutes. Turn off heat and do not remove the lid for 10 minutes.
  7. After 10 minutes remove the lid and combine gently. Serve hot with raita and curry of your choice.

  • In a pan cook chicken for 10-15 minutes with ½ cup yogurt, ginger garlic paste and salt. Make sure all the water of chicken has been dried.
  • In a blender put coriander leaves, mint leaves, green chilies, garlic cloves and remaining amount of yogurt and blend these ingredients to make green paste.
  • In preheated oil fry onions till become brown. Drain out the fried onions from the oil and grind it in the grinder.
  • The oil in which onion was fried put green paste and cooks on high heat to dry the water for 5-10 minutes.
  • After it add grind onion, black pepper, salt and chicken in it, cover the pan and cook for 5 minutes.
  • If you want, pour some lemon juice over it according to your taste.
  • Serving:

Dish out the green chicken curry and garnish it with ginger slices and lemon. Enjoy it with naan, fried rice or cumin fried rice.

Laddu

Sweet Pongal

Saag Chicken with spinach


This dish is tasty and the method to prepare is simple.

Ingredients

  • Chicken – 7 to 8 medium size pieces
  • Spinach – 1 bunch
  • Onion – 1 medium
  • Tomato – 1 medium
  • Ginger & Garlic paste – 1 tbsp
  • Yoghurt – 2 tbsp
  • Turmeric Powder – ½ tsp
  • Cumin Powder – ½ tsp
  • Coriander Powder – ½ tsp
  • Cashew nuts – a handful
  • Garam Masala – 2 of each (Cardamom, Clove & Cinnamom)
  • Star Anise – 2 flowers
  • Cumin seeds – ½ tsp
  • Bay Leaves – 2
  • Salt as per taste
  • Oil – 2 + 2 tbsp

Method to prepare

  1. Marinate the chicken with the Yoghurt and all the powdered spices like turmeric, cumin and coriander and salt for 15 minutes.
  2. Roughly chop the onion, tomato and the spinach.
  3. Heat 2 tbsp of oil.
  4. Temper with cumin seeds and ginger garlic paste.
  5. Add the chopped onion when the ginger garlic turns brown.
  6. Keep on frying till the onion turns brown.
  7. Add the tomato and sauté till the oil separates.
  8. Then add the spinach and the cashew nuts.
  9. When the spinach is fully cooked, and all the juice evaporates, take off the heat and cool aside.
  10. Grind the cooked and cooled spinach to a smooth paste.
  11. Heat 2 tbsp of oil.
  12. Temper with star anise, garam masala and bay leaves.
  13. Add the chicken and fry till it turns brown.
  14. Now add the spinach paste.
  15.  Cook for few minutes.

Now you can serve this with roti and rice. It gives a different taste. Give it a try.

Delicious Semiya Payasam


It is the mouth watering south Indian dish. It is included as a dish on wedding functions and other auspicious gathering. The method to prepare this is very simple. You can follow the following steps.

Ingredients: 

  • Semiya (Vermicelli) - ¾ cup
  • Full cream Milk - 1 litre
  • Sugar - ¾ cup
  • Ghee - 2 tbsp
  • Cashew nuts - 8 nos.
  • Raisins - 1 tbsp
  • Cardamom powder - 1 tsp.


Method to prepare

  1. Heat 1 tbsp. of ghee in a wide mouthed, thick bottomed pan. 
  2. Break the cashew nuts into small pieces and fry them in the ghee to a golden color and then remove.
  3. Add the raisins fry them until they are fluffy and then remove. 
  4. Add the remaining ghee and fry the vermicelli to a golden brown. 
  5. Add ½ litre of milk and boil, stir occasionally so that the milk doesn’t get burnt nor boil over.
  6. When the vermicelli has absorbed all the milk, add some more milk and allow the vermicelli to cook well. It will take approximately 20 minutes. 
  7. When the vermicelli is cooked (it should be mushy in consistency), add the sugar and remaining milk. 
  8. Boil for some more time until the payasam is thickened. 
  9. Remove from the stove and add the cardamom powder.
  10. Garnish with fried cashew nuts and raisins. Yummy and delicious semiya payasam is ready.

 The whole process of preparing takes about 30 minutes. When you have unexpected guests and you want to serve them a delicacy, this is the dish.

Chinese chicken with prawn combo curry


Ingredients: 

  • 10 medium sized prawns
  • 1 cup chicken, diced into 2-inch cubes
  • 1 cup celery, diced into 1-inch cubes
  • 1/2 cup carrot, diced into 1/2-inch cubes
  • 2 water chestnut, diced into small pieces
  • 4-5 baby corn, cut into half
  • 3 cloves garlic, minced
  • 3 tbsp dark soy sauce
  • 1 tbsp tomato ketchup
  • 1 and 1/2 tbsp hot sauce
  • 1 egg
  • 1 tbsp all purpose flour
  • 1/2 tsp pepper
  • Salt, to taste
  • 2 tbsp oil


Method to prepare

  • Wash, shell and devein the prawns. Pat dry.
  • Dice the chicken into 2-inch cubes.
  • Cut the vegetables as mentioned above.
  • Marinade the prawns and chicken pieces with a tbsp of all purpose flour, 1 egg, 1/2 tsp pepper and salt to taste.
  • Keep marinated for 30 minutes.
  • Heat 1 tbsp oil in a non stick skillet, add the chicken and prawn pieces and shallow fry for 2 to 3 minutes.
  • In the same pan, heat 1 tbsp of oil, add the minced garlic and rest of the vegetable and sautee for a minute or so.
  • Next add the dark soy sauce, tomato ketchup and hot sauce with a cup of water, cover and let cook until the vegetables are tender.
  • Next add the prawn and chicken pieces and let cook for a minute or so or until the chicken and prawns are cooked thoroughly and all the flavors blend in well.
  • Add salt, as required.
  • Serve hot with rice.

  • Oil- 4 tsp
  • Onion slice-1
  • Potatoes-2 big cubes
  • Chilly powder-2 tsp
  • Turmeric powder- 1 tsp
  • Ginger garlic paste- 1 tsp
  • Salt
  • Rice- 1 cup 
  • Water 2 ½ cup
  • Eggs- 2

Method to prepare:

Take a kadai Pour oil in that adds jeera, cashews, and red chilly. Saute the mixture gently and add onions. Ginger garlic paste should be added art this time and cut all the potatoes in the mixture well. Add chilly powder, turmeric powder and salt to this mixture. Saute this mixture for 3 minutes and ad rice t5o this mixture to get best blend of flavor. Coat the mixture with rice and then 2 ½ cups of water. Close and cook this mixture for 10 minutes. Scramble the eggs with turmeric pinch added with salt neatly. Add all the scrambled egg to this rice mixture well and mix it properly. Serve hot with best raita and potato chips.

Melting chocolates with best double boiling method





  • Take the chocolates bars and cut them into pieces. The chocolates must be kept in room temperature before melting. 
  • Take a large steel bowl for Double boiling method.  One for boiling the water and other bowl for melting the chocolates. 
  • Now take the sauce pan and then transfer the chocolate to the other vessel in which it can be fit slightly with bigger diameter. 
  • Ensure that there is no space in both sides so that no steam escapes when the sauce sits on the top of the bowl. When the team gets inside there might be a chance of chocolate getting melts with humidity or water by spoiling the mixture. 
  • The next step is by filling the water in the bottom of the vessel with 1 ½ inch water and boils it. When the water gets boiled well reduce the heat to minimum.

  •  Always leave an inch space between the two spaces. Then allow the chocolates in the top of the pan to melt well and transfer the contents to the bottom of the vessel.

Method to prepare:


Just make the lining a broiler pan with foil. Make a Greasy foil with the vegetable oil. And preheat the boiler well. Blend all the ginger, garlic and lemon juice, soy sauce, oil, honey, black pepper, hot pepper flakes, lime zest in a processor to make a marinade. Take half marinade and apply it on the fish and place it in the broiler. For 5 minutes broil the fish. After 5 minutes turn the fish over the side and apply the marinade and broil for 5 minutes. Dress 4 plates with cabbage, lettuce, carrots, and bean sprouts. Cut all the fish equally and place them in the top of the greens. Bengali fish curry with mustard

Ingredients

  • 2 tblsp lemon juice
  • Mustard oil for frying
  • Salt to taste
  • 8 Fish fillets
  • 1 tblsp red chili powder
  • 4 red chili whole
  • Salt to taste
  • 1 tsp mustard paste
  • 1 tsp turmeric powder
  • 4 green chilies slit
  • 2 tblsp coriander powder
  • 1 tblsp garlic paste
  • 1 tsp mustard seeds
  • 1 bay leaf
  • 2 cup onions chopped
  • 1 tblsp ginger paste
  • 1 tsp turmeric powder
  • 1 tsp onion seeds

Method to prepare

  1. Clean and cut fish fillet and wash well.
  2.  Remove excess water and then marinate with lime juice, turmeric powder and salt.
  3.  Keep aside for 30 minutes.
  4.  Heat up a pan and pour 1 tblsp of oil.
  5. Shallow fry the marinated fish from both sides until slightly brown.
  6. Take off and keep aside.
  7. Heat up remaining oil and mix in mustard seeds, red chilies and bay leaf.
  8. Stir fry for few minutes and mix in ginger garlic paste and fry again for a moment.
  9. Mix in cut onion and stir fry until slightly brown in color.
  10. Mix in mustard paste, red chili powder, coriander powder and turmeric powder.
  11. Stir fry masala nicely until oil starts separating.
  12. Adjust water and salt and bring to boil.
  13. Mix in shallow fried fish and put green chili slits on top.
  14. Stir fry on a slow flame until fish gets cooked and oil starts floating on top of the gravy.
  15. Take off and decorate with cut green coriander leaves.

Excellent vegetarian eggs recipe


Egg is a good source of rich protein. Eating an egg a day will give good strength to the body. In the same way vegetables gives excellent benefits to the body. Eat lots of vegetables will give good strength to the body. Here we give you an excellent preparation to prepare the best dish.


Ingredients:
  • Eggs-2
  • Maida- ½ cup
  • Minced meat- ½ cup
  • Cheese- 1 cube
  • Vegetables mixed- ½ cup (carrots, beans, peas, cauliflower)
  • Green Chilly- 2
  • Coriander leaves- 2 tsp
  • Onion- 1 
  • Baking powder- ½ tsp
  • Maida – ½ cup to cook in the oil. 
  • Salt 

Method to prepare:
Chop all the carrots, peas, beans, cauliflower and keep the mixture aside. Now take a large bowl and beat the eggs together well. When the eggs are  beaten in a good way add all the baking powder, Maida, and salt. Make all those together to form a batter. In this mixture add all the coriander leaves, green chilly and onions together to form up well neatly. Take a big tawa and apply the oil in it. When oil is hot add half batter to this mixture and evently spread across the tawa. Now put all the vegetables in the tawa and spread over the omelette. Pour the remaining egg batter over the vegetables and flip it on both the sides. Cook the egg until it is done clearly on both the sides in golden brown. Remove the flame and serve hot with tomato sauce.

Best Liver fry

  • Liver- 500 grams
  • Onion-1
  • Cumin seeds- 1tsp
  • Saunf -1 tsp

Method to Prepare:
Take liver neatly and wash them properly. Roast dry all the cumin seeds and saunf. After the mixture completely becomes brown in color you will get a good aroma nicely. After that powder them and keep aside. Now slice all the onions. Fry the pan with oil .After that put all the onions together and sauce till it becomes golden brown. Do not roast the onions. Now add all the liver and cook until the liver becomes tender.  Do not add water to this mixture. If you like to add water when you cook add a little spoon mixture and gently sauté it. When the liver has been cooked fully sprinkle the cumin saunf powder and pepper powder fro excellent taste. Serve this recipe with curd rice.

Mouth Watering Mutton Stew


Ingredients:-

  • 2 lbs. Mutton 2 medium Onions
  • 2 large Potatoes
  • 5 Green Chilies, chopped
  • 10 cloves Garlic
  • 1 Tablespoon Ginger, chopped
  • ½ Tablespoon Fennel seeds
  • 1 Tablespoon Pepper, powdered
  • ½ cup coconut milk
  • 4 green Cardamoms, chopped

Few Curry leaves:-

  • 3 inches Cinnamon stick
  • 1 Tablespoon Vinegar
  • 2 Tablespoons refined Flour
  • ½ cup cooking oil
  • Salt

Method:-
Peel and chop the onions into thin slices. Peel and chop the potatoes. Now heat oil in a pan and add all the spices and masalas and saute for 3 to 4 minutes. When done, remove and keep aside. In the same oil, add flour and saute for 3 to 4 minutes. Add the meat and saute for another five minutes. Add vinegar, salt, pepper and milk. Cover and cook on a low flame stirring occasionally till the meat is half done. Add the potatoes and the fried masala. Check for salt and add little water if necessary. Cover and simmer till the gravy has reduced to half. Add the thick coconut milk and simmer for five minutes. Do not boil. Serve hot with rice.

Vegetable Kurma

  • Half cup of Coconut          
  • One tsp of Poppy seeds

  • Half cup of chopped Onion            
  • One Garlic           
  • Cilantro leaves little amount 
  • Green Chillies three or four

Procedure for Vegetable Kurma:
  • Chop the mentioned vegetables in equal size and neat
  • Cook in two cup of water till almost done
  • Fry all the chopped vegetables with ghee
  • Add grinded blend into it 
  • Add Butter and regulate the seasonings
  • Serve the dish along with any variety of rice/rotis / chapathi /puri

Chicken Manchurian


Ingredients:

  • 1/4 kg boneless chicken, cut into fine pieces
  • 6-7 tbsps spring onion whites
  • 3-4 tbsps spring onion greens
  • 1/2 tbsp chopped garlic
  • 1/2 tbsp chopped ginger
  • 2 tsps soya sauce
  • 1 tbsp chilli sauce
  • 2 tsps vinegar
  • 1 tbsp corn flour + 5 tbsps chicken stock or water
  • 1/2 tsp brown sugar
  • 2 tbsps tomato sauce
  • 1/2 tsp red chilli pwd (preferably Kashmiri)
  • Salt to taste
  • 1 1/2 tbsps sesame oil
  • Oil for deep frying


For marinade: (marinate chicken with below ingredients for at least 15 mts or 1 hr)

  • 1/4 tsp pepper pwd
  • 1 egg white
  • Salt to taste
  • 1 1/2 tsps ginger-garlic-green chilli paste
  • 1/2 tsp soy sauce
  • 1 tbsp maida/all purpose flour
  • 2-3 tbsps corn flour
  • 1-2 tbsps of water, if required

Method:

  1. Heat oil in a heavy bottomed vessel, make small balls of the marinated chicken and carefully drop into the hot oil. Cook on low medium flame and towards the end of the cooking process increase flame to high and deep fry to a golden brown shade. Drain with a slotted spoon and place on absorbent paper. Keep aside.
  2. Heat a heavy bottomed vessel, add oil, add the chopped garlic and saute on high flame for about 30 secs. Add the chopped ginger and green chillis and saute for a few more secs. Add the spring onion whites and saute for 3 mts on high flame.
  3. Reduce to medium heat and add the brown sugar, soya sauce, tomato ketchup, chilli sauce and vinegar. Combine well and cook for 2 mts. Add 1/4 cup chicken stock or water and cook for a mt. Add the deep fried chicken balls and cook for 4 mts. Adjust salt, if necessary.
  4. Add the corn flour water and cook, tossing the contents, for 4-5 mts. You will find that it becomes thick due to corn flour.
  5. Add the chopped spring onion greens and combine. Garnish with more spring onion greens. Serve hot as a starter/appetizer.

  • Cliantro-1 bunch
  • Corn tortilla- 12 ounces
  • Pinto beans—15.5 ounces
  • Queso fresco-12 ounces
  • Oil for frying
Method to prepare:
In a bowl put all the potatoes together with cumin, chilly powder, salt, ketchup, and lace the oil baking .Now bake the preheat oven for 20 to 25 minutes until it becomes tender. In the same time boil the tomatillos and chopped onion in the water and cover them for 10 minutes. Now keep the mixture aside for 10 minutes until it becomes cool. After that pour half the puree cilantro until it becomes smooth. Now fry all the tortillas in small amount of oil until it becomes soft. Mix all the potatoes together with pinto beans with ½ cheeses and ½ cilantro. Now fill the tortillas with potato mixture and roll them up. Place all the seam side down to the 9x13 inch baking dish. Now spoon all the tomatillo sauce over the whole enchiladas. Now spread all eth remaining cheese over the sauce. Bake all the mixture for 20 minutes until it gets hot.
