Amazing Brinjal Fry


Brinjal fry is the best delicious recipe that can be prepared in the home by simple way. This dish can be prepared with minimal of ingredients. This dish can be added with rice, chapatti or bread. Brinjal can be prepared in many ways. But now we are going to see about a new recipe that can be prepared from the home itself.

Ingredients:

  • Brinjal- 2 
  • Turmeric powder- a pinch
  • Chilly powder- 3 tsp
  • Garam masala- 1 tsp
  • Vegetable oil- 5 tsp
  • Salt 

Method to prepare:
Wash the brinjal properly and slice the brinjal in to 1/8 round shapes. Now take a bowl add all the brinjal chilly powder, garam masala, chilly powder and salt .Toss well neatly and keep the brinjal marinate for 10 -15 minutes. Take large pan and deep fry all the brinjal for 3 minutes until the brinjal turns soft. Drain the oil from the brinjal well and make a best serve with rice and sambar.

Saag Chicken with spinach


This dish is tasty and the method to prepare is simple.

Ingredients

  • Chicken – 7 to 8 medium size pieces
  • Spinach – 1 bunch
  • Onion – 1 medium
  • Tomato – 1 medium
  • Ginger & Garlic paste – 1 tbsp
  • Yoghurt – 2 tbsp
  • Turmeric Powder – ½ tsp
  • Cumin Powder – ½ tsp
  • Coriander Powder – ½ tsp
  • Cashew nuts – a handful
  • Garam Masala – 2 of each (Cardamom, Clove & Cinnamom)
  • Star Anise – 2 flowers
  • Cumin seeds – ½ tsp
  • Bay Leaves – 2
  • Salt as per taste
  • Oil – 2 + 2 tbsp

Method to prepare

  1. Marinate the chicken with the Yoghurt and all the powdered spices like turmeric, cumin and coriander and salt for 15 minutes.
  2. Roughly chop the onion, tomato and the spinach.
  3. Heat 2 tbsp of oil.
  4. Temper with cumin seeds and ginger garlic paste.
  5. Add the chopped onion when the ginger garlic turns brown.
  6. Keep on frying till the onion turns brown.
  7. Add the tomato and sauté till the oil separates.
  8. Then add the spinach and the cashew nuts.
  9. When the spinach is fully cooked, and all the juice evaporates, take off the heat and cool aside.
  10. Grind the cooked and cooled spinach to a smooth paste.
  11. Heat 2 tbsp of oil.
  12. Temper with star anise, garam masala and bay leaves.
  13. Add the chicken and fry till it turns brown.
  14. Now add the spinach paste.
  15.  Cook for few minutes.

Now you can serve this with roti and rice. It gives a different taste. Give it a try.

Delicious Tandoori Chicken

This is definitely the most loved recipe by all chicken lovers in India. This tandoori chicken is cooked in the oven. It taste delicious and mouth watering.

Ingredients:
  • Chicken legs – 3 or 6 chicken drumsticks
  • First marinade
  • Kashmiri chili powder – ¾ tsp
  • Ginger – garlic paste – 1 ½ tsp
  • Lemon juice – a few drops
  • Salt to taste
  • Second marinade
  • Kashmiri chili powder – 2 tsp
  • Coriander powder – ½ tsp
  • Gram flour – 3 tsp
  • Ginger garlic paste – 1 tsp
  • Clove – 3 or 4
  • Cinnamon – 1 stick
  • Cardamon – 3
  • Nutmeg – a pinch
  • Fennel seeds – ½ tsp
  • Yogurt – ¾ cup
  • Mustard powder – ¾ tsp
  • Kasoori methi powder – 1/3 tsp
  • Oil – 3 or 4 tsp
Method:
  • Give two or three slits on the chicken pieces till close to the bone.
  • Mix the ingredients listed in marinades one and set aside for half an hour.
  • Heat two tsp of oil and add gram flour and roast it in a slow flame for about a minute.
  • Dry roast garam masala and make it into a fine powder.
  • Mix all the ingredients listed in the second marinade (except oil) along with the gram flour paste and coat the chicken with it.
  • Finally add the oil on top.
  • Leave it in refrigerator for at least four to five hours.
  • Preheat oven to 450 degree F and place it on a greased baking tray.
  • Cook for ten minutes and then turn around and cook for another ten minutes.
  • For the next ten minutes reduce to 250 degree F.
  • Take out of the oven and allow to cool a bit before serving.

Chicken Pasanda


Chicken Pasanda is an excellent side dish for chapatti and Non. You can have it with hot rice. The cooking time for it is only 30 minutes.  This dish is liked by all especially kids. You can make this dish at home. You can follow the below method to prepare it.


Ingredients

  • Skinless chicken – approximately  1 kg
  • Vinegar – 1.5 tbsp
  • Yogurt – 1 cup
  • Salt – to taste
  • Garam Masala – 2 tsp
  • Paprika/Degi Mirch – 1 tsp
  • Red Chili Powder – 1 tsp
  • Oil – 2 tbsp
  • Ginger Paste – 1.5 tbsp
  • Garlic Paste – 2 tbsp
  • Crushed Tomatoes – 1.5 cups
  • Water – as needed
  • Fried Onions – 1 cup crushed
  • Cilantro – for garnish

Method to Prepare

  • Poke holes in the chicken and pour white vinegar into it.
  • Mix well and set aside for 15 – 20 minutes.
  • Mix Yogurt, Salt, Red Chili Powder, Paprika and Garam Masala with the chicken.
  • Mix well and set aside overnight. You can refrigerate it.
  • Take a flat bottomed pan and heat the oil.
  • Add the Ginger Garlic Paste and lower the heat.
  • Add the crushed Tomatoes and cook it till the oil separates from the tomatoes.
  • Now add the chicken.
  • Mix well and add some water if needed. Close the pan and cook until the chicken is ¾ cooked and boiled.
  • Crush the fried onions and add them to the chicken.
  • Cover and cook until the chicken is cooked well.
  • Once done garnish with cilantro and it is ready to serve.

Children love to have it and will ask for more. Give it a try.

Delicious Baked masala wings


Here is a recipe with new nick in chicken. This recipe is very delicious to prepare and mouthwatering by its extreme taste. This preparation is time consuming and loved by everyone. Here we can see in detail about the preparation

Ingredients:                                
• Chicken wings -1 kg
• Black Pepper- ½ tsp
• Garam masala- ¾ tsp
• Salt- ½ tsp
• Oil-1 tsp
• Maida – ½ cup
• Cooking oil can be sprayed

Sauce:
• Fennel seeds- ¼ tsp
• Ginger- ½ tsp
• Garlic ½ tsp
• Oil- 1 tsp
• Tamarind- ¼ cup paste
• Water-1 cup
• Salt
• Red chilli powder-1 tsp
• Kashmeri Mirch- 1 tsp
• Garam masala-1 tsp
• Jaggery- 1 tsp

Dipping sauce:
• Salt
• Cilantro- chopped nicely
• Mint leaves- chopped
• Sour cream

Method to prepare:
Wash and dry the chicken wings in a paper towel. Add the salt, Garam masala, black pepper to the wings and coat well. Mix well with the hands. Sprinkle 1 tsp of oil in the wings. Cover and refrigerate the wings for at least 30 minutes to 1 hour. You can heat the oven to 400 to 205 c. Coat eth wings with the flour and coat well. Place the wings in the baking sheet. By using foil slightly coat with oil. Spray the cooking oil in the wings. Then again bake the wings for 30 minutes. Again flip the wings back for 30 minutes. 

Prepare the sauce:
Heat 2 tsp oil in the pan and add fennel seeds, ginger, garlic, and green chilies. Cook for low heat for about 25 seconds. Now add the tamarind paste and cook for  medium heat. Add water and cook well until it gets boiled. Now you can add red chilie powder, kashmeri mirch and garam masala. Mix well gently in a very low heat. Add the jiggery and allow melting. Remove the wings and pour in a large vessel. Pour sauce in the wings and coat it well. Serve it by dipping sauce.
