Splendid taste of Potatoes and Bean enchiladas

Potatoes are really a very good nutritional food. A potato gives best source of potassium; fiber and vitamin C. Beans Also have good vitamin C and carbohydrates. Cholesterol level will be lowered when you eat beans. Here we give you best vegetarian recipe with mouthwatering taste. The details are given below.

 Ingredients:
  • Potatoes -1 pound
  •  Cumin -1 tsp
  • Chilly powder-1 tsp
  • Salt
  • Ketchup- 1tsp
  • Tomatillos fresh- 1 pound(husks should be removed)
  • Onion -1 large
  • Cliantro-1 bunch
  • Corn tortilla- 12 ounces
  • Pinto beans—15.5 ounces
  • Queso fresco-12 ounces
  • Oil for frying
Method to prepare:
In a bowl put all the potatoes together with cumin, chilly powder, salt, ketchup, and lace the oil baking .Now bake the preheat oven for 20 to 25 minutes until it becomes tender. In the same time boil the tomatillos and chopped onion in the water and cover them for 10 minutes. Now keep the mixture aside for 10 minutes until it becomes cool. After that pour half the puree cilantro until it becomes smooth. Now fry all the tortillas in small amount of oil until it becomes soft. Mix all the potatoes together with pinto beans with ½ cheeses and ½ cilantro. Now fill the tortillas with potato mixture and roll them up. Place all the seam side down to the 9x13 inch baking dish. Now spoon all the tomatillo sauce over the whole enchiladas. Now spread all eth remaining cheese over the sauce. Bake all the mixture for 20 minutes until it gets hot.
